Egg whites with Penzey's Parisian herb seasoning mix, covered in a layer of fresh raw spinach, with soft goat cheese added on top when the eggs are almost done, and then folded in half like an omelet.
Fancy! Sounds good though. I like scrambled, over easy, soft boiled, hard boiled but with a soft-ish yolk (cooked around the edges but kind of darker yellow in the middle if that makes sense), poached, fried....
