tomato paste and drained diced tomatoes
cooked lentils (not overdone leave slightly crunchy)
cooked italian sausage
sauteed onion and plenty of green peppers
mix all together in a casserole dish
bake 350 top with parmesan cheese (can add bacon!) close to end.
nice nutty flavor with the lentils.
The truth is what you can get other people to believe.
Not a casserole, but does have veggies mixed in with the meat...
Martha Stewart promoted her meatloaf on the Today Show last month. It was what I've been looking for for years.
The powdered mustard definitely has to be Colman's. And using a loaf pan that size really makes a difference. It seems small, you have to pile the contents high - but that's why it needs a cookie pan underneath.
I didn't even think I had a food processor, then remembered the "Magic Bullet" my exSO gave me for Xmas a few years ago ("buy one, get one free!") and it actually did the job.
But the most important part is, the meatloaf is great, and meatloaf sandwiches the next day just as good.
In a casserole dish, throw in:
1 lb egg noodles (cooked)
2 cans of tuna
2 cans of cream of chicken soup
crumble potato chips on top
cook at 350 for about 30 min (or until its not gooey anymore)
not the healthiest... but very cheap, fast and yummy
Ha, my family made the same recipe, minus the chips. I still make it every once in a while.
Ok, I have one. It doesn't have a name. I just call it Leftover Ham and Potato Thing.
It's for when you have a bunch of leftover Honey Baked Ham.
Butter a big casserole dish
Preheat oven to 400
Thinly slice up 1 yellow onion. Add a TBS of butter to skillet and brown onions until carmelized. Set aside.
Thinly slice up about 4-5 lbs of peeled potatoes. I use a food processor or a mandolin.
In large saucepan (big enough to hold all the potatoes), medium heat, melt 3 TBS of butter. Add 3 TBS of flour and whisk to make rue. Cook for 1 minute. Slowly whisk in 2 1/2 cups chicken stock.
Add 1/2 cup whipping cream and 1/2 container Creme Freche (1/2 cup) and bring to a slow boil. Add salt and pepper to taste and dash of fresh nutmeg. Simmer until starts to thicken.
Add potatoes and onions to sauce and stir to coat. Remove from heat.
Put a layer of potatoes in dish. Add pieces of ham on top. Pour remaining potatoes in layer on top.
Bake for about 1 hour 40 minutes or until knife slides through potatoes easily.
Lazy Stuffed Cabbage
(caveat: not sure a toddler will go for this one)
Shred a small head of cabbage
Saute a large onion chopped with a couple cloves garlic in olive oil
When onions are softened and just starting to brown add 1# ground beef (or turkey) and saute until no longer pink.
Season with S&P. I like to add some dried basil too.
Stir in a large (28oz?) can of diced tomatoes and 1 cup quick-cooking rice (Minute Rice)
Layer in a 9X13 pan alternating cabbage with beef mixture.
Top with shredded mozzarella - about 2 cups (I like it cheesy) - and bake covered with foil until bubbling - about 25-30min @ 375F, then remove foil and bake until cheese just starts to brown.
Makes enough for a (buttered) 9X13 pan
Boil 1 large bag wide egg noodles
Boil 3# - about 5 - red potatoes and mash
Saute a large chopped onion until browned.
You can saute chopped bacon with the onion and drain all the fat off.
Put 1/2 the potatoes in the pan top with 1/3 of 3 cups shredded cheddar cheese then 1/3 of the noodles.
Layer 1/3 of the onions (or onions/bacon) on top of that
Repeat layers 2 more times: potatoes, noodles, onion, cheese
Bake uncovered @ 350 for 30-45 min until cheese is melted
Serve with sour cream & chopped chives.
