    Default Easy meals to prepare for new parents

    One of my (work) neighbors just had a baby. The couple has no family in the area (they are coming next week), so I thought I would prepare a couple trays of food that keep well and are easy to reheat. I am not the best at this stuff, so keep it simple, and please make sure these are things that I can make in disposable trays.

    Lasagna with no boil noodles is pretty easy. Directions on the lasagna noodle box.

    Tuna casserole. Soups are good too, and stews. You can make them and then freeze them in disposable containers.

    Cashew Chicken Cassarole:
    2 tablespoons butter
    1 cup chopped celery (I used water chestnuts)
    1/4 cup shopped onion
    2 10 1/2 ounce cans cream of mushroom soup (I used cream of chicken)
    2/3 cup chicken broth
    4 cups diced cooked chicken
    4 tablespoons soy sauce
    2 cups cooked rice
    1 cup chow mein noodles (I used green onions)
    1 cup cashew nuts

    Preheat oven to 375 degrees. In a large saucepan, saute celery and onion in butter until tender. Stir in soup and chicken broth. Simmer 5 minutes. Add chicken and soy sauce. Cook over low heat 5 minutes. Stir in rice. Spoon into a 9x13 inch baking dish and bake until liquid bubbles to the surface, 15 to 20 minutes. Sprinkle noodles and nuts on top and brown in oven. Serves 6.

    Seconding Laura's suggestion of lasagna-Barilla has the recipe on their box of no-boil noodles. You can do baked ziti even faster-same ingredients except using ziti instead, and its almost as good as more labor-intensive lasagna.

    I prefer sausage instead of ground beef in either dish-more flavor. But ts great meatless, too.

    Super Easy Turkey Chili:
    1lb lean ground turkey
    1 can whole kernel sweet corn
    1 can black beans
    1 can pinto beans
    1 can kidney beans
    1 large + 1 small can of Rotel
    Chili powder & cumin to taste

    Brown the turkey and drain. Put all ingredients in a crock pot, cook on low-medium heat for at least 3 hours. Can serve with sour cream, shredded cheese, corn muffins. Super easy.

    ETA: RINSE AND DRAIN THE BEANS! RINSE AND DRAIN THE BEANS! I just put this in the crock pot and realized that I had forgotten this very important step. Also, drain the corn.

    No recipe to share but the best advice that was given to me when our first baby was on the way was to get throw away plates, cups and silver ware- think month long picnic quantity. That made meals so much simpler to not have dinner dishes to do other than the ones we cooked maybe a nice supply of that to go with the meal you make will give them more time with their new one.
