What's on the menu tonight??
For me it's wings, fries, pizza, and of course, beer!!
I'm currently drinking a banana bread stout from a local Colorado brewery. It's delicious!

I made some asian-style chicken wings. Didn't come out as well as I'd hoped but it's my first time using the recipe.

I will have microwave oatmeal, cinnamon and apple flavor.
My dog gets some and that is the only kind she likes.
I am being stared down, letting me know it is time to get it ready.
I had two small tomatoes, one small cucumber, a handful of green olives, a cheese stick, all cut up small, with italian dressing, for dinner at noon.
I only drink water.

Blackeyed peas, mashed potatoes, cracklin' cornbread, and ham with peanut butter oatmeal cookies. Now I drinking beer to wash it all down.

My husband made flatbread pizzas. I had a breakfast pizza with egg, champagne cheddar, bacon, and mushroom and one with caramelized onions, goat cheese and balsamic. I have been nursing a hangover all day so they were pretty awesome.

Eggplant involtini.
Then later an apple and oscypek (Polish mountain cheese), with ice wine. Ice wine doesn't really go well with oscypek, but what the hey.

Hot chicken sandwiches, diet coke (DH) and Ice for me. The Sam's Club peach/blueberry/cherry/apple pah is out in the car. In the snow.

What with the cold snowy weather here all day yesterday, we just stayed indoors puttering, relaxing, & SNACKING - ending with my "Crab & Goat Cheese Nachos", (with salsa & homemade guacamole on the side) which turned out to be way more filling than we thought.
Thus the roasted chicken wings originally planned for last night are now on the menu for tonight.

Bacardi1 I am going to need the recipe please for the nachos. I made spinach artichoke dip and sourdough bread slices and MD crabcakes to take to a party last night to represent both cities. The crabcakes were not a huge hit here in the land of beef. Oddly, the lil smokies in bottled BBQ sauce were eaten up
I learned everything I know from a chestnut mare so don't even try me.

We first had the nachos at a restaurant, & then duplicated them at home.
Tortilla chips (for brightest appearance, it's nice if you can get a variety of colors - red, green, blue, etc.)
Lump crabmeat (approx. 8 oz. works for one baking sheet full)
Approx. 6-oz. log of plain goat cheese
Approx. 8 oz. shredded mozzarella
Fresh Pico de Gallo, red salsa, green salsa, sliced pickled jalapenos, chopped cilantro, & guacamole on the side
Preheat oven to 350 degrees. Spread a single layer of tortilla chips on a rimmed baking sheet & bake for 5-10 minutes. Remove from oven & scatter chips evenly with crabmeat, goat cheese, & mozzarella. Return tray to oven, switch to low broil, & continue cooking until cheese melts. Keep a close eye on it because you don't want chips to burn. Remove from tray to a large platter & serve with bowls of condiments on the side.
We like these because the chips stay nice & crisp, & folks can take a few on individual plates & dress them up the way they want.

I made a chicken pie yesterday. I keep trying to reproduce my grandmother's recipe. I think hers may have been a variation of Moravian Chicken Pie since she was from North Carolina, but hers had rice along with the chicken and gravy. Found a recipe for Moravian Chicken Pie, followed it and added rice. Did not work out the way I'd thought, and now I'm faced with eating this chicken pie for the next two weeks. It's very filling and huge.
The recipe that I had sussed out was closer to hers, but it's a real pain in the butt and takes three days. My recipe uses chicken fat in the pastry, homemade chicken broth, and chicken that had been stewed separately from the broth. You need huge amounts of broth for the pie (rice is cooked in broth) and its accompanying gravy.
With it I had stewed tomatoes and okra and black-eyed peas. Mixing the peas with the tomatoes and okra was really tasty.
