Well I'm getting a Haflinger, and I ordered him a custom canvas picture from our vacation at Glacier this summer. There is a living social coupon going around for a 16x20 canvas picture for $35 with free shipping. I bought two. I'm not sure what picture I will use for the other one.
I've made candy buckets a few times in the last several years. I've been seeing them a lot at stores lately too if you don't want to make one yourself. You can tailor them to just about any occasion. I've also made them as "thank you" gifts and they were a huge hit.
For the one I made for Valentines Day a few years ago:
I bought a little red metal pail at Walmart and put red aquarium gravel in it to give the bottom stability. Then I just bought a bunch of his favorite candy bars, taped them to the end of small dowel rods from the craft section, and stuck them in the pail. I tied ribbon around the rods and stuck a little musical stuffed devil in the pail too.
He loved it and had to take pictures to show his family.

My fave gift I ever gave was our first Valentine's living together. My DH's home had burned down when he was 19. He lost everything. I contacted his old highschool and got a copy of his senior yearbook. (I married the Homecoming King!!!). We will take it to his 20th reunion and get signatures
I learned everything I know from a chestnut mare so don't even try me.
