I've been tending toward drink names recently, but some thoughts:

Sweet Adeline http://www.thinkbabynames.com/meaning/0/Adeline
Aiglentina (although it would probably be mispronounced often) http://bbnames.com/meaning_of_name_Aiglentina.php
Dulcinea (Spanish for sweet)
Melisenda (also a Spanish name meaning Sweet)

Can you tell us more about your friend? Some personality traits, music preference, etc. Need a little more to work with (lots of great horse names to "match" their people )

I personally love using names that are either based off of ancient complex societies or drawn from them. From common ones like Egypt, Greece and Rome, to places like Harappa, Sumer, Persia, Assyria, Babylon, and Akkad. I also like to drawn names from pieces of ancient artwork, such as Lady of Auxerre or Doryphoros. Ancient rulers or significant figures is another one I use too.

Sweet Lillybee (google it, hehehe)
http://en.wikipedia.org/wiki/Lilium has lots of names for all the different flowers in the lily family, such as tiger lily, Alpine Lily, or Swamp lily
