Default Escrow accounts for horse purchases - tell me more?

On another thread, someone mentioned using an escrow account for a horse purchase. I'm guessing that some amount is kept in escrow until the delivery of the horse.

This sounds very interesting, and I'd like to know more.

A long, long time ago I bought a Hanoverian mare sight unseen. I had many emails and conversations with the seller, but of course never met her in person. I had the mare shipped to me from several states away, which gave me several days to ponder the possibility that something entirely different from what I had bought could get off the rig. I also had a little difficulty getting the papers, but finally did. I realized after that that having some sort of escrow for such transactions would be wonderful. I think including an escrow for things like expensive saddles would be great too, because that was another adventure when I did a cross-country saddle buy. I haven't needed an escrow account lately, but I would certainly use one in similar situations.
