One of my jumpers has a low palate and a thick tongue and I have found that a Nathe bit works the best for her.

We had a POA pony that not only had a thick tongue, she had thick lips.
Any form of toughness on the part of the rider caused her pain from her lips being pressed against the bars of her mouth.
We had success with this and her tongue with a Nathe.

I've invariably found that a gentler bit is more effective.
