I have a group of hunter/jumper students who want to school over cross country jumps. They are competent at 2'-2'6". Is Gordonsdale a good place to go?
Yes it is mostly low level, has a lot of options under 2'6, inviting banks/ditches. Only possible drawback for the very green is that there is no enclosed area/ring to warm up in, but it's a x-c school, right?
I have yet to do a recognized HT and Gordonsdale was just fine for me at my BN/N level. I had a blast and learned lots while I was there.

You'll find lots of options at the lower heights, from very straightforward to more "eventing" type jumps. Its also really well maintained and lovely just to ride around on.
