    Default Packed Lunches

    Ok. I need some cheap creative packed lunch ideas that have lots of vegetables and no/little carbs please! Preferably something that will last a few days. Must be packed in a tuper-ware or cling flim. I do have access to a microwave so can be re-heated.

    I am going crazy eating left overs/sandwiches/pasta/carbs, and I really need to eat more vegetables.

    How about sliced veggies and a dip/sauce? Or a grilled veggie salad?

    I heart HUMMUS!! it is good with veggies, (carrots, celery, etc) apples, crackers, bread, rice cakes.


    and it comes in many many delicious flavors.

    I also like veggie burgers on those thin buns things loaded with salsa.

    I make my son fresh tomatos with fresh mozzarella with a spinkle of sea salt, basil and olive oil. He loves it.

    I am fortunate to have an entire shelf in the fridge at work so I keep it stocked with hummus, baby carrots, cherry tomatoes, goat cheese and cucumbers.

    I also like to keep ingredients for my favorite salad: pre-washed baby spinach (no need to rewash--I learned on America's Test Kitchen that rewashing actually adds bacteria), a box of sliced mushrooms, a red onion, walnuts, crumbled feta cheese, an apple or some other fruit and Whole Foods' Pear Vinaigrette. It takes 5 minutes to throw it together and it's so satisfying that it wards of cravings for the Chick Fil A fries and lemon meringue pie that beckon me from the lobby.
