My question wasn't necessarily specific to any one horse or snap shot, but as a whole. If we can't expect more out of the best of the best (riders and horses) then who can we ask for more from?

You can do this, as long as you are only riding your own horse, and not riding horses that are owned by the person "paying you" or by a client of that person.
