We're doing our first CTR and they will be having potluck suppers on Friday and Saturday. Not being a seasoned camper, I am a little intimidated by all of this. Any good ideas for dishes I can make a head and keep in the cooler that won't wilt in this %^&* heat?

cube 1/2 lb cooked chicken
1 can black beans, drained and rinsed
1 can unsalted corn, drained
4-6 scallions, sliced thinly
1 medium red or yellow pepper, diced
Juice from 2 limes
1/4 cup olive oil (I use a little less)
1 tsp - 1 TBSP cumin, to taste (we like LOTS!)
It calls for salt, but I don't add any because the chips are salted.
Mix together at least 30 minutes (preferably several hours) before dinner and serve with broken tortilla chips. Alternatively, can be made like a dip and served with tortilla scoops. I also provide mexican cheese and salsa.

Thanks, C! Great idea. Now you've got me thinking Tex-Mex is the way to go (and avoid the mayo dilemma).
