To the best of my knowledge, it never materialized. I would still love one so maybe this will kick it back in gear and someone (wink, wink, nudge, nudge) will put it together.

Erin, do you know if a decision was ever made about whether COTH would allow us to publish a book with "COTH" on it? Would we have to use a new name?
There are so many charities that need help right now, I think this would be a wonderful way to help out.

Why couldn't this be put together to aide
the horses/animals for katrina?
One of the chapters could be recipes for
when you go camping/or eventing
one chapter could be treats for animals
ect. the cheapest way would be to contact
a prison that has a print shop and see
if they would be intrested in doing it.

Alrighty - I'm not 100% sure how this is going to work.. but how about we try to come up with some categories? Once we do that, people can email me the recipies and what category they should be in... and we can start from there. Any ideas?
How about playful names (horse related!) for each category.. Horse Ovaries (hors de ovueres)? j/k..

Oh - maybe 1/2 of the proceeds to Katrina Relief (we'll have to decide exactly where it needs to go..) and 1/2 to CANTER (which canter, all of them?) Or maybe that should depend on who is selling them. If CANTER offers them on thier website, they get it.. and if another site sells them then Katrina relief?

My sister made a family cookbook. I wasn't anything fancy, just some word shopped pages with some graphis in a spiral bound notebook covered in plastic. They probaby cost a buck to make. Just an idea instead of a big fancy published book.
I have some great dessert recipes to contribute, as well!

Well, then, would you be willing (since you been there/done that) to step up and help us get this printed? Now's the time to do it so we can have it for the Holidays.
I'd put in: Maltaschen Casserole (a take off on an ancient German ravioli receipe), South Carolina Peach Cobbler, Susan's Super Summar Salad, World's Best Rosemary Chicken, etc., etc., etc.!

Okay, here's one of my favorites:
Thai Coconut-Ginger Shrimp
Be sure you buy unsweetened coconut milk (not the kind used for piña coladas), and add enough red pepper flakes to accent the creamy sauce.
2 tablespoons peanut oil
1/2 small onion, finely chopped
1 tablespoon peeled and grated fresh ginger
3 garlic cloves, pushed through a press
1/8 teaspoon red pepper flakes (or more, to taste)
2 tomatoes, seeded and chopped
2/3 cup unsweetened coconut milk
2 pounds large shrimp, peeled and deveined
Salt and pepper
3 tablespoons chopped fresh cilantro
metric
1. Heat oil in a large nonstick skillet over medium heat. Cook onion 3 minutes, until softened. Stir in ginger, garlic, and red pepper flakes; cook 1 minute more. Add tomatoes and coconut milk. Cook 10 minutes or until mixture thickens.
2. Add shrimp to skillet. Cook 3-4 minutes, until cooked through. Add salt and freshly ground black pepper to taste. Sprinkle with cilantro before serving over rice.
Serve with a very cold Gewurztraminer.

We did this as a fund raiser for my daughter's co-op pre-school. 15 years later, it is still my favorite cookbook. There are companies out there that produce them. I'd love to share my Turkey Tettrazini, my husband's unbelievable Lobster Stew and my favorite gourmet bran mash recipes. I'd also buy the cookbooks for Christmas gifts.

I'm interested in buying one, maybe contributing a recipe (I have to see if my mom has a good one), and if you'd like, I would be willing to talk to my niece's theraputic riding program ... If they were interested, and COTH was interested, I'd be more then happy to sell the cookbooks to whoever was interested and I know the members of the therapy program would do the same ... I go to a community college, work @ a hospital, and my parents own a few shops, I'm sure we could get quite a few sold, even if it wasn't for the theraputic program here ... Let me know ... I offered my services for CBER magnets, but no one ever picked up on them, so I'll offer here ... The more states we could sell to the better off it'll be ...
Oh, and, just a thought, but I think maybe COTH members who submit articles or for the cover or something, should include photos of them with their animals ... 1 photo per person ... We did this for my pony club years ago and it turned out wonderful ... Of course, any COTH'er that has an OTTB that was rescued from the track or adopted through CANTER should definately include a photo if we're trying to support CANTER at all through this ...
If we can get the jump on this and get things rolling, it would be GREAT christmas gifts ...

Again, does anyone have any suggestions for categories? So far we have Horse Treats and Quick and Easy.... but we'll need to think of creative names for each chapter!
Those of you who offered to help with the technical stuff can you shoot me an email too, and we can try to get this rolling so they are finished before christmas??
Lastly, if you want to include a picture of you and your horse with the recipes, please do not send them in yet. Just put a little note at the bottom that says you'd like a picture in the book, and if we decide to do that I'll contact you for one.

LOL---may need "sub-categories"...an "Air Fern" category for light/low fat/low-cal recipes, and a "Weight Builder" one for the rich recipes, lol!

I've tried to email everyone back and let them know that I got each recipe, but I'm pretty sure I've missed a couple of you. I've been getting tons of emails, so don't feel bad if I don't email everyone back individually, just make sure I got the recipes on the main list on page 1!
We're gonna need to start discussing technical stuff here pretty quickly if we want to get these done by Xmas, so I had a few questions. Personally, I'm leaning towards sending the proceeds to different CANTER organizations. I was thinking that when someone orders one they could "pick" which CANTER we should send the money to, and then hopefully each group will get some help from the sales. For selling them at horse shows/tack shops, etc, I'd think we could just have the organizer pick which CANTER group(probably the local one) instead of individual customers. Does that sound like a workable idea? If anyone has any suggestions, I'd love to hear them! I know everyone has a favorite charity and I'd love to give to everyone.. but if we spread this too thin it may become a "5 dollars to you and 5 dollars to you" type situation, and I *think* we could do more good if we channeled all of the profits in one direction. This is DEFINITELY up for discussion!!
Also, do we want to have this in a binder so we can add to it? Or would you rather have it bound by a a publisher? How much would you be willing to pay for one? Do you want a picture of you and your horse with your recipe? Credits at the end, instead? Can anyone donate artwork for the cover? Any master cooks that could do some editing/organizing? Do you like how the categories are set up now, or should they be switched around? Lots of stuff fits under 2 categories and I'm not sure how to lay it out. What about a category for stuff that can be frozen and used later? (Perfect for doing chores/riding then running in for a quick dinner!)

It has been suggested that we use Exceller as our charity of choice so that the money goes to one place. (Rather than splitting it up between CANTER organizations.) What does everyone think? Alright guys, I finally had time to update the list on page 1 of the recipes I've gotten. Feel free to contribute to the categories that are lacking, or actually, ANY category! BUT when you email me PLEASE include your COTH NAME, CATEGORY for each recipe, and what charities you'd like to see the profits go to. It's also very helpful if you use measurements such as cups, tablespoons, etc. I'm trying to correct the ones that have used 'cans' and such to make it more reliable.

Yummy, and a good cause! Where do I sign up. I only have one thing that I make, for pot lucks, but its easy and yummy! I skimmed the posts, is this for Katrina animal victims etc?? I will send in a couple recipes also - mainly I have good chicken recipes - chicken broccoli casserole (maybe it's different from Sonesta's, but probably not as good from the comments I see here! http://chronicleforums.com/groupee_common/emoticons/icon_smile.gif ), southwest chicken shortcake, also some apple (probably horse friendly too!) and rhubarb desserts. You can use whatever you think fits well with the cookbook. And let me know where to buy them! Will they be out in time for Christmas?

Hi Foof--just checked the list, and thought I'd say that my Hunt Breakfast Potatoes aren't really for breakfast. Would be better under "sides," I think. They work great for a hunt breakfast when paired with a ham and some salad.

I was hoping someone who is a good writer and pretty creative could write a forward for the cookbook. Everyone can brainstorm for what to include - but if one person could take on the actual writing part that would be wonderful.
I was thinking it could go somewhere along the lines of this -
-tell what COTH is, and who WE are for the most part
-mention all of the wonderful charity things the board has done - CBER, Baby Aiden, Katrina Relief, etc - and maybe try to include estimates of the money that has been donated or the # of horses saved - doesn't even have to be close to the dollar amount but "over blah blah blah" or 126 horses saved from slaughter - etc. I dont know the exact numbers, but I'm sure those who are active with CBER can figure it out.. right??
Anyway, because this is going to be raising money for a charity.. I think it would be good to include the other good things the COTH board has done. We'll also need to include a little bio about the charity that we choose - and so far the most votes have been for CANTER! We'll just have to figure out how to distribute the monies between the chapters. So unless a huge number of people step in and say otherwise - the CANTER organizations just might have a new fundraiser! (We'll have to speak directly with them and clear it so we can use thier info in the cookbooks, but I think it'll be fine.)
Anyone think they can help out??
ALSO, I've had a couple of cover artwork submissions - but we'll need more. I'm thinking we can choose quite a few pieces to be included throughout the book, as well as pictures of COTH posters with their owners.
It also crossed my mind that we could have an "In memory" page that mentions our beloved COTH posters who have passed away; Cactuskate, Willem, Aero, and anyone else I'm missing. It's just an idea and of course we'd have to clear it with families/owners.

Wow, I read through the list of recipes and I want some of those now!
I'd be happy to contribute, but my most requested dish is actually pretty boring. I do an herbed green bean dish whenever I have to contribute to family gathering or pot lucks. It's easy, is actually better if made ahead, and very tasty. If you want it, I'll send it along.
My other two favorites are desserts. I have a (GA) peach cobbler that's awesome, but you already have one. I also do a pretty good oatmeal cookie. Are you maxed out on recipes?

We are LOW on the following - Vegetables, Lowfat/light, Highfat/rich, "not for horses only"/horses AND people food, and horse treats.
