I keep two different compost piles - one is almost all manure/hay/grass clippings and one is manure/pine sawdust shavings.

What is the manure/pine sawdust pile good for, specifically? Someone once told me azaleas but that could be a faulty memory...

The reason someone told you that is because Azaleas love acid...and Pine compost has a lot of it! Pine needles are also a great compost for Azaleas, Camelias and Magnolias. I use some of my stall shavings in my veggie garden...but only by putting it in the garden in the winter ..so it is well composted by the spring. I also till all the dirt together before I put in the new plants.
